The Vinoy, one of the most prominent resort properties in the region, recently debuted a new restaurant: Parasol, a full-service Latin American eatery overlooking the downtown St. Pete resort's main pool area. It opened July 5.

The outdoor restaurant at the hotel, officially called The Vinoy Resort and Golf Club, Autograph Collection, combines “an energetic, island-like atmosphere with a menu starring fresh seafood, bright flavors and spices, and tropical craft cocktails,” according to a statement.

"Parasol brings The Vinoy's poolscape to life with its energizing atmosphere along St. Petersburg's dynamic waterfront." The Vinoy General Manager Vanessa Williams says in the release. "As the resort's thoughtful renovations continue, Parasol elevates The Vinoy as an inviting and stylish social hub, welcoming both resort guests and the local community."

Parasol, the release states, features “bold dishes infused with Latin American flair, including lighter dishes ideal for poolside dining, like refreshing salads, bowls and 'botanas,' Mexican small plates, such as lobster quesadillas and grouper ceviche with leche de tigre, a citrusy Peruvian marinade.” The al fresco restaurant also offers larger plates including creative Latin-inspired burgers, Cubano sandwiches and cochinita pibil tacos, which are made with a traditional Yucatan-style barbecued pork.

Located alongside The Vinoy's main pool, Parasol, with outdoor seating, features a marble wrap-around bar and sophisticated black and white wicker seating that complements the matching poolside chaise lounges, the release states. Verdant greenery further creates a retro-chic poolside environment.

Parasol joins The Vinoy's additional food-and-drink concepts, including French patisserie Lottie, Paul's Landing and The Veranda. Parasol is open from 11 a.m. to 7 p.m. daily. The 354-room Vinoy dates back to 1925.
