Restaurant development firm names new COO

St. Petersburg-based Little Greek promotes Bryan St.George.

ST. PETERSBURG — Little Greek Franchise Development has hired from within to fill its COO role, promoting Bryan St.George, who previously served as vice president of operations and development.

The St. Petersburg-based company owns and operates the Little Greek Fresh Grill brand, a fast-casual Greek restaurant concept with locations in Arkansas, Florida, Illinois, Kentucky, Ohio and Texas.

“We are lucky to have Bryan in this new role for Little Greek Fresh Grill and working with our franchise operators,” Little Greek President Nick Vojnovic states in a press release. “He brings extensive restaurant experience to our table.”

St.George, a Florida native, will focus on the company’s continued growth. According to the release, additional Little Greek locations are planned for the Dallas Metroplex and Orlando markets.

St.George’s background, the release states, includes growing brands such as AmRest Holdings SE, the largest independent restaurant operator in central and eastern Europe with 1,000 locations in 13 countries. His U.S. background includes working with TGI Friday’s, Beef O’Brady’s, Arby’s, Big Boy restaurants and Boneheads Franchise LLC, which experienced triple growth during his tenure.

“Our Little Greek brand is now established, and we are poised for future growth,” St.George states in the release. “Not only in existing locations, but also new, untapped markets.”
